Calm down Chamomile & Honey tea cake
The thing about the New Year is that though it feels that it should be it isn't an actual blank slate or fresh start. A lot of people, who I'm sure would prefer not to, are carrying 2014 baggage with them into this promising new year.
Those of us that the last year wasn't too kind to could do with a bit of a calm down, hopefully my chamomile cake will be good for any weary bruised souls gingerly traversing the first month of the year.
- 5 grams loose Chamomile Tea
- 250 ml Almond Milk
- 170 grams Coconut Oil
- 150 grams Honey
- 2 Eggs
- 270 grams Plain Flour
- 1 1/2 teaspoons Baking Powder
Place Chamomile and Almond Milk into a small saucepan, over a medium heat bring to a simmer and then remove from heat.
Allow to cool to room temperature.
Preheat oven to 170c.
Beat together Coconut Oil, Honey and Eggs.
Alternating with Chamomile-Milk add Flour and Baking Powder, mix until just combined.
Pour into greased loaf tin and bake in oven for 45 mins or until you can insert a skewer and remove clean.
