Candy Cane & White Chocolate Tiramisu

It's probably no surprise to you that the reason I adore the holiday season has less to do with gifts and more to do with all the glorious food.  And of course the thing I enjoy most about food is the fun of creating something new to share with you. The mood took me this morning to make real an idea I've had since I discovered Lindor Peppermint and White Chocolate truffles, a reworking of one of my favourite desserts, the perfectly named tiramisu or pick-me-up which is something many of us could use in the hectic whirl as we rush towards the end of the year.

I hope you enjoy this pepperminty pick-me-up as much as I do.

In the spirit of sharing more broadly this recipe isn't dairy free, but I do have a flawless dairy free tiramisu recipe here for you.

makes 1 large or 4 individual tiramisu

Candy Cane and White Chocolate Tiramisu

Ingredients:

6 Eggs Separated
220 grams French Caster Sugar
500ml White Hot Chocolate (prepared & cooled)
1/4 teaspoon Peppermint essence optional
100 grams Lindt White Chocolate
135 grams Candy Canes
500 grams Mascarpone
250 grams Savoiadi Biscuits

If  you wish to make an adults version add a little peppermint schnapps to the cooled White hot chocolate before dipping Savoiadi Biscuits.

Directions:

Beat egg yolks with caster sugar for 15 minutes or until the mixture thicken and lightens. Add the mascarpone and beat until just combined and smooth.

Finely grate 1/2 of the white chocolate and fold into mascarpone mixture.

Beat egg whites until thick and stiff, and gently fold into the mascarpone mixture.

Briefly pulse the candy canes in a blender to create fine chunks.

If desired stir peppermint essence through the cooled white hot chocolate. Dip savoiadi biscuits into cooled white hot chocolate and add a layer to bowl. 
Next add a thick layer of mascarpone and sprinkle with candy canes.
Repeat in alternating layers until bowl is full.
 

Refrigerate for a minimum of 2 hours.

Shave remaining white chocolate and scatter over top of tiramisu before serving
