Honey roasted apple and cashew dip
I cannot tell you how happy I am that it's spring and the weather is warming up. I've never really thought of myself as a spring/summer person, preferring to layer up in autumn and winter; but years of living in this desert climate seems to have changed me. After our two weeks sweltering in Japan we returned home to relatively cool weather and I missed the heat, for the first time in my life.
So spring is planting the seeds of delight in my soul (and a lot of things that I want to get happening around this house before our temperatures start hitting the 40s), in honour of our apple tree bursting into blossom and the sweetness of springs arrival I've put together this super simple dip.
I've made it to retain a little crunch and crispness, but if that's not your thing just blend it until it's a smoother consistency.
50 grams raw Cashews
140 grams red Fuji Apple
2 tablespoons Honey
Preheat oven to 200c
Quarter and core apple, place in a small baking dish with cashews and drizzle with honey.
Roast for 15 minutes, remove from oven and allow to cool.
Place in blender and process until mostly smooth.
