Peach and Honey Mascarpone "Bruschetta"
Lately I've been sharing a few of my simpler food creations on Instagram and neglecting the recipe vault here. While I'd love to share completely separate recipes on each feed I just don't have the resources to manage that and I thought it couldn't hurt to share them here as well. I mean you might not even be following me on Instagram or Facebook, so why should you miss out on this deliciousness!
Here's one of my favourite snacks, full of nourishing and delicious ingredients with none of the feeling of sweets deprivation.
2 slices Dark Rye Bread
Orange pressed Olive Oil
2 tablespoons Mascarpone
1 tablespoon Honey
1/2 Peach finely sliced
Brush both sides of rye with olive oil, lightly toast both sides.
Mix together honey and mascarpone and spread on toasted rye; layer peach slices over mascarpone.
Toast lightly under grill to melt mascarpone.
