Peach, Coconut & Thyme Icy-poles

To say I talk about the weather a lot would be accurate, to be fair when we reach the peak of summer here I obsess over the weather. Will it be hot, yes, almost always yes, will it be too hot to leave the house? More often than not absolutely YES!
So I shade the windows, hope our ancient A/C doesn't quit on me and find delicious ways to both pass the time and cool down.  

These really don't take that long to freeze, but trapped inside our little hot box of a house when they're ready to go it's about time!

Peach, Coconut and Thyme Icy Poles

Ingredients:

  • 1 peach
  • 1 1/2 tablespoons maple syrup
  • 1 tablespoon fresh thyme leaves
  • 500 ml coconut cream

 

Method:

Wash and finely dice peach, place into a bowl and coat with maple syrup.

In separate bowl whisk coconut cream until blended and smooth, fold thyme leaves through.

Drain peaches (retain maple syrup) and divide into icy-pole holders.

Fold maple syrup through coconut cream & thyme.

Fill molds with coconut mixture and freeze for four hours or overnight.
