Salt, vinegar and rosemary potato chips

The weather has chilled just slightly in these parts, with the odd and confusingly super hot day thrown in. But along with putting on wintery layers, I'm increasingly drawn to staple comfort foods like homemade chips.  The beauty of this is that the first stage of boiling the chips in vinegar mean every chip has that lovely sharp taste, and of course cooking them yourself means you can make them as crispy of soft as you like!

Salt, vinegar and rosemary potatoes via Lila Wolff


  • 650 grams Potatoes
  • 3 cups White Vinegar
  • 2 springs fresh Rosemary
  • 1 tablespoon Pink Salt
  • Olive Oil


Finely slice potatoes, layer slices in a large pot and pour vinegar over.

Simmer over medium heat until potatoes are soft but not falling apart.

Remove from heat, drain and pat potatoes dry.

Preheat oven to 175c

Lay potatoes on baking sheet, lightly drizzle with Olive Oil. 

Finely chop rosemary and sprinkle the potatoes with it and the salt

Bake for 20 minutes turning once at around 10 minutes.
